FN-Grain Fall Number Analyzer

A device for determining α-amylase activity in grain and flour

FN-Grain is a laboratory falling number analyzer designed to determine α-amylase activity in grain and flour using the Hagberg-Pertten method, in accordance with the requirements of ISO 3093.

The instrument is used in grain, flour milling, food, and certification laboratories to assess the quality of wheat, rye, and their processed products.

What Is the Falling Number?

The falling number (FN) is the time (in seconds) it takes for a standard rod to sink through a heated starch suspension.
This value depends directly on the activity of α-amylase:

• Low FN → high enzymatic activity (germination, grain damage);
• High FN → low enzymatic activity;
• Optimal FN → stable baking properties.
